Crispy Cinnamon Chips...


Do you remember when Taco Bell used to serve these? Why oh why, did they ever stop? Well, never fear- you can make your own! 

You'll need;
tortillas (wheat or white), cut into wedges with a pizza cutter
3/4 cup of fat (whatever you want to fry in, I used tallow)
1 cup white sugar
1 T cinnamon

You'll need to have ready;
tongs or other utensil to get the chips out of the oil
a plate to drain them on, with paper towels or other
a ziploc bag with the cinnamon and sugar mix
a bowl for your finished chips.

Heat your oil in a small sauce pot.
Fry 'chips' 2 to 4 at a time. These fry super fast once the oil gets hot.
Fry on both sides til they puff. Getting them a little brown is good.
Toss them all on your drain plate.
Once you've cooked your whole batch, shake them 2 or 3 at a time in the cinnamon-sugar mix.
Serve.
